Join Milo for an unforgettable evening celebrating the "Spirit of Waco", a unique collaboration between two of the city's most visionary artisans: international award-winning distiller Chip Tate and Chef Corey McEntyre. This exclusive event, in partnership with Creative Waco, offers a rare opportunity to experience the innovative craftsmanship that has put Waco on the map.​

Sample unreleased spirits crafted by Chip Tate, the pioneering founder of Balcones Distilling, and 2025 gold medal recipient for his Japanese single malt whisky at the World Whiskies Awards. Chef Corey McEntyre,  the creative force behind Milo and Red Herring will curate accompanying food samples using local, fresh ingredients and his storied flair for Southern-inspired cuisine.

Here’s what’s on the menu:
Course 1: Hon Shaimeji Battles The Pink Robots
Marinated mushroom karaage + yuzu hoisin
Paired with Japanese malt finished in port casks

Course 2: Green Tea-quila Pork
Green tea braised pork tostada + almond salsa matcha
Paired with a blend of reposado & blanco tequila

Course 3: Cigarettes & Alcohol
Crispy chicken skin taquitos filled with smoked chicken tinga
Paired with mezcal

Plus: cornbread and small bites to start the night right.
